Peaches are in full swing for us here in Northern California. My CSA fruit box has been full of this particular stone fruit and I’ve been exploring lots of different ways to prepare peaches. Since my husband is deployed right now, I’ve been drawn to the least time intensive options possible. Easy is the name of the game right now. And a no-cook peach salsa is the perfect way to use them up!
Fruit salsas, in general, are one of my favorite ways to dress up chicken, fish or pork. The natural sweetness of the fruit brings out the flavors of the meat. Peach salsa is a lovely cooling addition to a summer meal. The combination of peaches, tomato, onion, and basil makes a tangy, sweet treat that you’ll love.
Summer Peach Salsa
Ingredients:
2 medium peaches
2 medium tomatoes
1/4 cup red onion, diced
2 tbsp fresh basil, chopped
Juice of 1/2 lemon
Directions:
Dice one of the tomatoes and one of the peaches.
Roughly chop the other peach and tomato.
In a blender or food processor combine the roughly chopped peach and tomato and run on low until the mixture has liquefied but is still chunky.
Combine all ingredients in a medium bowl and mix well.
Chill for 1/2 an hour to let flavors develop and enjoy!
For a fresh variation, try mint instead of basil!
