Recipe Collection: Coconut-Cranberry Peanut Butter Truffles

Delicious treats are the best part of the holiday season, but we can enjoy these recipes year-round. Whether it’s Thanksgiving, Christmas, or the middle of June, you don’t have to be a master baker to make yummy candies for your family.

These “holiday truffles” are chocked full of seasonal cranberries and rolled in “snowy” coconut, these super easy raw peanut butter truffles are sure to please your guests — and save you time in the kitchen.

Coconut Cranberry Peanut Butter Truffles

Ingredients:

  • 1/2 cup natural peanut butter
  • 1/4 cup raw honey
  • 1 cup chopped coconut, divided
  • 1/2 cup dried cranberries

Directions:

Step 1: Combine peanut butter, honey, 1/2 cup coconut and dried cranberries. Place in fridge to harden for one hour.

Step 2: Once hardened, scoop out teaspoon-sized portions and roll into balls.

Step 3: Roll balls in the remaining 1/2 cup coconut.

Step 4: Let balls harden in the fridge for another hour–if you can wait that long!

These truffles are so easy that even the newest of real foodies (like me!) won’t find making them a chore.

  1. I hope you enjoyed them, Karen!! Stacy, they are super yummy–but EB won't eat them b/c they don't have chocolate in them! Haha! I prefer pb anyway! I am planning on making an assortment of treats–including these–for our neighbors this year. I might fill a tin with one of each treat.
