Recipe Collection: Berry Lemon Popsicles

Summertime is the best; so many fun activities in the sun, but of course, we’ll get hot and maybe sunburned. As a child, I spent my summers at the public pool or playing outside all day. Looking back, I bet my summer vitamin D levels were pristine.

I loved the ice cream truck as a child, even though my parents rarely gave me money. I almost always used my birthday money for ice cream indulgences (it was the best part of having a summer birthday). 

As an adult, I cringe at the idea of food coloring and other food toxins in ice cream. If this sounds like you, we have a solution for you – layered berry lemon popsicles made from real food ingredients.

Berry Lemon Popsicles

This recipe will make about 12 layered popsicles. It takes a bit more time between freezing each layer, but they’re worth the wait. 

Layer 1 Ingredients:

  • 3 cups strawberries
  • 1/2 cup honey
  • 1/2 cup water

Layer 2 Ingredients:

  • 1/2 cup lemon juice 
  • 1/2 cup honey
  • 3 cups water

Layer 3 Ingredients:

  • 3 cups blueberries 
  • 1/2 cup honey 
  • 1/2 cup water

Directions:

Step 1: Blend the first layer (strawberries, honey, and water) before pouring it into the popsicle mold and freezing for at least an hour.

Step 2: Blend the second layer (lemon juice, honey, and water) before adding it to your frozen first layer and freezing again for at least another hour.

Step 3: Blend the third layer (blueberries, honey, and water) before adding it to the second layer and freeze completely.
