I love baked oatmeal. It’s easy to make, can be prepared the night before and popped into the oven in the morning for a no-fuss breakfast. And best of all, I can usually stretch it with a side of scrambled eggs to serve us two breakfasts! Everyone in our family loves apples and cinnamon, and apples are cheap in season. Making this recipe a win-win, not only for taste but for our budget.
Baked Apple Cinnamon Oatmeal
- 1 stick of butter, divided
- 4 cups diced apples, about 2 large apples
- 1/2 cup honey, divided
- 3 teaspoons cinnamon, divided
- 4 cups gluten free oats
- 1 tablespoon baking powder
- 1 teaspoon ginger
- 1 teaspoon nutmeg
- 1/4 teaspoon salt
- 4 eggs
- 1 cup milk
- 1 cup kefir or yogurt
*Money Saving Tip* when you eat canned fruit, save the juice when you drain it. Use the leftover juice in recipes like this, substituting it for the milk, further reducing the amount of milk used and stretching those groceries dollars further.
Want to soak your oats for improved nutrition? No problem. Omit the milk and replace with 1 cup of water. The night before or 12 hours prior to preparing the dish, mix the oats, water, and kefir or yogurt together, stir well to guarantee all the oats are moist. Cover with a towel and let soak in a warm place.
Baked Apple Cinnamon Oatmeal
Ingredients
- 1 stick butter, divided
- 4 cups diced apples, about 2 large apples
- 1/2 cup honey, divided
- 3 tsp cinnamon, divided
- 4 cups gluten free oats
- 1 tbsp baking powder
- 1 tsp ginger
- 1 tsp nutmeg
- 1/4 tsp salt
- 4 eggs
- 1 cup milk
- 1 cup kefir or yogurt
Instructions
- Pre-heat oven to 350 degrees.
- Meanwhile place the stick of butter in a 9x13 in pan and place in oven to melt butter.
- In a large bowl combine apples, 2 teaspoons cinnamon, and mix to coat.
- Once butter is melted pour 1/4 cup from the pan and set aside. This should leave you with about 1/4 cup left in the pan.
- Pour the apple mixture into the pan and spread evenly. Â Drizzle 1/4 cup of honey over the apples.
- Combine the oats, 1 teaspoon cinnamon, baking powder, ginger, nutmeg, and salt. Mix to combine.
- Add the eggs, milk, kefir, remaining 1/4 cup honey, and butter to the oat mixture. Mix to combine and pour over the apple mixture. Spread evenly.
- Bake at 350 for 45 minutes.
