Recipe Collection: Fresh Tomato Salsa

This is one of my favorite foods ever.  It is very simple to make, doesn’t take long, and is just delicious.

Serve it with chips…on top of tacos or burritos…or with my favorite fajita veggies and rice recipe (that’s coming soon).  Even off a spoon.  It doesn’t really matter, it’s awesome.

I won’t bore you with a bunch of patter and stories about how I discovered and perfected this.  Let’s just skip right to it!

Fresh Tomato Salsa

This salsa is best using fresh, vine-ripened tomatoes.  It can be a little bit bitter with pale winter tomatoes.  That’s why summer is the best time to make it.  If it’s not summer (or even if it is), look for those small Campari tomatoes in the store.  They are a little bit more expensive than other types, but they are worth it.  So sweet and juicy on their own.

I love cilantro and always add as much as I can…but if you’re not a huge fan, stick to a lower amount.

Jalapeno?  Up to you.  I usually don’t have any, so I don’t add them.  Sometimes I see a great deal at Aldi and I get an 8-oz. bag for less than $1 and then I have to buy them…and into the salsa they go.  Depends on how much you enjoy the flavor or how much you want heat.

Ingredients:

  • 1.5 lbs. fresh tomatoes
  • 1 small yellow onion
  • 1/2 jalapeno (optional)
  • 1/2 – 1 bunch cilantro
  • 1 lime, juiced
  • 1 tsp. sea salt

Directions:

Step 1: Chop the tomatoes and add them to a 1-quart jar or bowl

Step 2: Chop the onion and add it to the tomatoes

Step 3: Remove the cilantro leaves from the stems and rough chop the leaves; add to the bowl

Step 4: Add the lime juice and salt; stir and taste

Step 5: Adjust the salt and add jalapeno if desired (remove seeds if you don’t want it too hot)

That’s it!  It is so easy.  Tastes even better the next day, but is great immediately too.  Enjoy!

  • Remove the cilantro leaves from the stems and rough chop the leaves; add to the bowl.
  • Add the lime juice and salt; stir and taste.
  • Adjust the salt and add jalapeno if desired (remove seeds if you don't want it too hot).
