Recipe Collection: Guacamole

I’ll be honest: I have never really tried guacamole.  Okay, so why am I posting a recipe for it?  Almost everyone around me likes it, so I experiment with it (as I do with bananas, which I also don’t like).  I have watched many people make it and have studied what they seem to like best.  And although I’m not eager for the avocados, I love most of the other flavors.  I figured I could give it a shot.

Early tests when Daniel was 2 years old were amusing to watch.  First, he dipped a chip in like he wasn’t so sure and took a tiny bite.  Pretty soon, he was scooping up huge amounts to eat.  He loved it.  When my son Jacob was about 12, he actually photographed the pictures for this blog. My kids love guacamole so much, so I thought some of you might, too. 🙂

Guacamole

Ingredients:

  • 1 avocado, ripe
  • 1 – 2 cloves of garlic, minced
  • 1/4 cup onion, diced
  • 1/4 cup tomato, diced
  • 1 tbsp. cilantro, chopped
  • 1/4 tsp. cumin
  • 1/2 tsp. sea salt
  • 1/2 tsp. chili powder
  • Juice of 1/2 lime

Directions:

Step 1: First, cut your avocado in half.

Step 2: Remove the seed, and scoop out all the goodness.  Put it into a bowl and mash it a little.

Step 3: Mince your garlic, then add it to the bowl.

Step 4: Chop your onion and add that too.

Step 5: Add your cilantro, then squeeze your lime juice in.

Step 6: Chop your tomato and add that, too, along with sea salt.

Step 7: Stir it all together.

That’s it.  You’re done!  Serve with corn chips or fresh veggies as desired.

Guacamole

  • 1/2 tsp. sea salt

Instructions

  • Mince your garlic, then add it to the bowl.
  • Chop your onion and add that too.
  • Add your cilantro, then squeeze your lime juice in.
  • Chop your tomato and add that, too, along with sea salt.
  • Stir it all together.

  1. Living in New Mexico, we are never at a loss of avocados. I LOVE guacomole. My husband makes a very simple version. Mashed up avocados a little garlic salt or powder and that’s it. We have it with pretty much everything. We eat it with chips, enchiladas, tacos, tostadas, etc. I think this is why I love this state so much!!!!

  2. For our guacamole we use:

    2 avocados
    1 roma tomato (diced)
    1/2 onion (diced)
    juice of a lime
    salt and pepper
    cumino (aka -cumin for the non-Mexicans 🙂

    We mix ours in and serve it from a molcajete: http://en.wikipedia.org/wiki/Molcajete

    Tip: If you are making guacamole for a party where it may be sitting out for more than 30 minutes before it is completely devoured, toss the pit from the avocados in the serving bowl with it and it will keep the guac from turning brown.

One adaptation I sometimes do (avocados get a little spendy if you are making this for a crowd) is do 50% avocados and 50% mashed up green peas (I use the frozen bags of sweet baby peas, thawed and mashed) it tastes just like regular guacamole – no one has ever guessed the “secret” ingredient! I got the idea from another recipe website – it seems to be a popular adaptation.
