Recipe Collection: Sun-Dried Tomato Pasta

I love sun-dried tomatoes.  Once, I had a large glass jar of them packed in olive oil (which is how you should buy them if possible) that I needed to use up.  It was summer, and I had fresh tomatoes, too.  I created this sauce and tossed it with some angel hair pasta.  It’s a light, flavorful and delicious sauce!

This is also a super quick meal, so if you’re tired at the end of the day and have to pull dinner off quickly…this is definitely your friend.  It’s great as it is, or you can add some grilled chicken on top for extra protein.

Is it wintertime, and you are without decent fresh tomatoes?  Those orange-ish rocks that pass as “tomatoes” off-season won’t do this dish justice.  In that case, feel free to sub in 1 can fire roasted diced tomatoes!  Perfect?  Nope, but when is life ever perfect?  It sure is delicious.

Recipe Collection: Sun-Dried Tomato Pasta

Ingredients:

  • 2 – 3 cloves garlic, minced or crushed
  • 1/2 c. sweet onion, chopped
  • 10 – 12 sun-dried tomatoes packed in olive oil, chopped
  • 2 medium ripe tomatoes, chopped (or 1 can fire-roasted diced)
  • 2 tsp. basil
  • 1 tsp. salt (or to taste)
  • 2 tbsp. olive oil
  • 8 oz. pasta, cooked according to package directions* (or spaghetti squash or zoodles!)

Directions:

Step 1: Heat olive oil in a pan.  Add onion and garlic, and sauté until soft.

Step 2: Add tomatoes and spices.

Step 3: Cook until some liquid is gone and the flavor is blended all through the tomatoes.

Step 4: Serve immediately over hot pasta.  Add a sprinkle of parmesan or Romano for an extra treat.  Serves  2 – 3.
